Homemade Protein Bars


It is 11:30pm and I spontaneously felt that I wanted to cook something. Not that I am hungry but I remembered my husband saying that sometimes he wishes he can bring snacks to work. So off to the kitchen I went.

I made these healthy bars for my husband to snack on while at work. I borrowed the recipe from and made a few changes because I do not have a couple of ingredients at hand.

Here's my twist to the recipe.

Mommy Azza's Protein Bars

Prep time: 15 minutes
Servings: 20 servings (1" x 1")

1/8 cup muscovado sugar
1/4 cup chocolate protein powder
1/2 cup water
1/4 cup peanut butter
      pinch of salt

1 1/2 cups quick cook oats
1       tsp. pure vanilla extract

Combine the muscovado sugar, chocolate protein powder, water, peanut butter and salt in a medium saucepan.
Bring to a boil over medium heat while stirring often.
Add the quick cook oats.
Let the mixture boil for 1 minute while stirring so that it does not stick to the pan.
Remove from heat and let the mixture cool for 1 minute.
Add the vanilla and stir well to combine.
Spread evenly onto the Nigiri Sushi Mold.
Press the mold to drop the bars onto wax paper to cool.

I made 10 bars using the mold. I just cut them in half to make bite sized bars.

Nutrition per serving: (approx)
67 calories. 7g total fat. 12g carbs. 8g protein
