Really Easy Chicken Soup by Mommy Azza

I am not an experienced kitchen diva or cook or chef, oh heck, I'm too undomesticated to be worth anything in the kitchen! My husband even cooks better dishes, but I wanted to share this one really easy soup I made. It is so easy that even undomesticated people (like me) can do it!

Let's start cooking!

Really Easy Chicken Soup by Mommy Azza

Ingredients:
4 stalks of Celery
3 pcs Carrots
2 pcs Bell Pepper (red or green)
1 small Cabbage
1 whole Garlic
1 whole White Onion
4 pc Chicken Breast
Water
Salt
Cayenne Pepper

How I cooked it:
a) Peel the Garlic, Onion & Carrots.

b) Remove the Celery leaves & the hard string parts. (Sorry I do not know what that part is called)

c) Cut the vegetables.
     - Onion into half.
     - Carrots, Bell Pepper, Celery into 2-3 inch sticks
     - Cabbage into 2 inch pieces

c) Cut the Chicken Breasts into 2 inch cubes or to how many servings you want your soup to be. I cut mine to 10 pieces because I'm aiming to have this soup 2x a day for 5 days.

d) In a big pan, or anything that can hold about 1-2 liters of water plus vegetables, boil the water.

e) Add the garlic and onion. Wait for 2 minutes then add the chicken. Wait another 2 minutes before adding the rest of the vegetables.

f) Add a pinch of cayenne pepper and salt to taste.

g) It is ready when the chicken is really white and the vegetables are tender.


I love making soups because you can basically do anything you like and it can still turn out edible. You can use any part of the chicken you like, I chose breast fillet because it is the healthiest part. You can add brown rice or potatoes if you want to include carbohydrates in your soup.
